The Thomas S. Moore Bourbon Chardonnay Casks delivers a complex tasting experience that evolves with each sip. On the nose, you’ll find an inviting mix of oak, caramel, and herbal baking spices, along with subtle hints of dried dark fruit, vanilla frosting, roasted nuts, and peanut brittle. The aroma is rich and layered, yet the influence of the Chardonnay wine cask isn't immediately apparent, making it reminiscent of the distillery's classic bourbon profile.
On the palate, the wine influence becomes more pronounced, with notes of dried grapey fruit, vanilla, and roasted nuts blending with the familiar bourbon elements of oak, caramel, and baking spices. However, the integration of the wine and bourbon feels a bit disjointed, with the two flavors competing rather than harmonizing. The finish is medium in length, with lingering grapey sweetness, oak, and nuts, though a slightly metallic off-note emerges, leaving a faint trace of wine that feels somewhat unrefined. While the bourbon itself is solid, the wine finish doesn't quite complement it as seamlessly as expected.
